Parmesan Encrusted Tilapia

Baked tilapia that has been coated in a mixture of parmesan cheese, pepper and kosher salt.

 

Ingredients

  • 3 tilapia fillets
  • 1/2 cup finely crushed garlic-flavored croutons
  • Melted butter
  • 2 tablespoons, parmesan cheese, grated
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper, freshly ground
  • 1 tablespoon cayenne pepper
  • Olive oil

Directions

  1. Combine cayenne, salt, croutons, cheese and pepper and set this aside.
  2. Coat tilapia fillets with melted butter. Lightly coat both sides in cheese mixture and let this rest for two to three minutes.
  3. Dip tilapia in the olive oil. Place them on a shallow roasting pan and bake in an oven at 400 degrees for 11-12 minutes or until the tilapia is opaque and flakes easily when tested with a fork. Serve warm.
